EASY BANANA AND COCONUT BREAD (GF)

This is another one of my easy recipes that use a GF vanilla cake mix as the base.  I actually have a lot of these as I’ve experimented over the years with cake mixes, adding different things to them – sometimes resulting in success and sometimes resulting in failure! This one of my success stories…

INGREDIENTS

1 vanilla/butter cake pkt mix (I always use GF ones but normal ones work well too)

4 tbsp butter  or spread (I use Rice Bran Oil Spread or Nuttelex)

2 mashed bananas

2 large eggs

1/2 cup coconut cream

1/2 cup icing sugar

1/2 cup coconut

1 tsp baking powder

METHOD

I love a good, short, method!

It’s one of those easy throw everything into the bowl at once and mix for a couple of minutes with beaters until well combined.  Bake in the oven for 30-40 minutes until golden brown on springy to touch.  DONE!

You can eat this warm or wait until it’s cooled, spread it with cream cheese icing and a sprinkling of pumpkin seeds.
